Humboldt Fog [HUHM-buhlt fawg]

Humboldt Fog is a goat-milk cheese made exclusively by Cypress Grove Chevre in California. It is named for the local ocean fog which rolls in from Humboldt bay. This is a fresh cheese with a shelf life of only a few weeks.

The cheese has a central line of edible ash much like Morbier. These is also an ash covering, and a soft bloomy white rind. The cheese ripens from the outside in which will produce a more pungent runny shell surrounding the fresh goat cheese center. This runny shell will widen as the cheese matures and is considered the best part of the cheese by many. The bloomy mold and ash rind is edible, but is fairly tasteless.

Humboldt Fog has won many awards including ACS 1998, 2002; London International Cheese Competition 2004; Best Dairy Product IFFCS 2002.

Flavor - The cheese is creamy, light, powdery, slightly lemony and mildly goaty with a stronger flavor near the rind.

Appearance - Ash covered bloomy rind, central ash line, airy white paste.
